All ingredients should be at room temperature.
• 3 eggs
• 350 g homemade cottage cheese(or 450 g store-bought, drained for 2–3 hours)
• 50 g butter
• 130 g sugar
• 1/4 tsp salt
• 240 g flour (start with 220 g and adjust if needed)
• zest of 1 lemon
• 1/4 tsp turmeric
• 15 g baking powder
• 15 g vanilla sugar (or 1 tsp vanilla extract)
• 80 g raisins
• 50 g dried cranberries (30 g for batter, 20 g for topping)
• 5 dried apricots (about 20 g, for decoration)
• 80–100 g white chocolate (for frosting)
• You’ll also need: 2 × 12 oz Panettone molds.

Step 1 - Dry Ingredients
In a bowl, combine:• flour• vanilla• salt
Mix everything well and set aside.
